Asian Style Chicken and Mushrooms with Zucchini

Had some things that I needed to get used up in fridge and just didn't want the normal grilled chicken and steamed veggies tonight. I was in the mood for something full of flavor and a little spice and since I've also been in the mood for something Asian I came up with this... 



2 chicken breast cubed
1 cup sliced mushrooms
1 1/2 cups zucchini, peeled with julienne peeler
2 Tbls Walden Farms Asian dressing/marinade
1 Tbls light soy sauce
2 tsp minced garlic {love garlic}
sprinkled about 1/2 tsp ground ginger
black pepper to taste
2 tsp EVOO

Get the skillet nice and hot, add the EVOO and the cubed chicken, lightly brown the edges and add garlic, black pepper and mushrooms. Cook until chicken is cooked thru and add zucchini. Saute until zucchini is cooked thru. Stir in Walden Farms Asian dressing/marinade and add soy sauce. Serve immediately. 

2 servings

Dijon Turkey Burger


One of my favorite staples to always have on hand is 99% ground turkey. So when it goes on sale I grab several packages. I have a pound seasoned up and cooked always in the fridge just to throw a quick salad together or add an ounce to one of my meals. It makes it super easy for those nights you need a quick dinner. One of my hubby's favorite quick dinners is soft tacos. There are so many different options on how to prepare it.

This past weekend I was in the mood for a turkey burger but wanted something just a little different then the last one I did on the portobello. This is more like a classic burger but I added fresh minced garlic and seasonings to the meat, topped it with dijon mustard, fresh tomato, a lil avocado and fresh ground pepper on a bed of lettuce.  Yum!!!

Memorial Day {Rembering America's Fallen}

Remember to take time this weekend to remember what it is really about. My family has the utmost respect for our men and women who are fighting, have fought and for those who have paid the ultimate sacrifice to protect our great nation and our freedom. We keep our military and their family in our prayers!

Micah a day never goes by that you are not in our thoughts. We remember all the great times that we've had and thank God for bringing our families paths together. We love and miss you Bro and look forward to the day we get to see you again.

Grilled Turkey Burger & Portabella Mushroom


I've never grilled portabella mushrooms before and seriously I have no idea why since I love them. They are super easy, fast and taste amazing on the grill. Knowing that my daughter would not eat the mushroom since she calls it fungus LOL she had her burger on whole grain bread. I had my doubts what she was going to say because of all the peppers that I put in the meat but I was totally surprised when she tried it without anything said and loved it. She kept telling me all thru dinner how good it was :) I love that both my hubby and my girl are having everything that I am cooking. They will had a grain of some sort with theirs but they still are eating the lean and green part of it. 

 1 lb 99% ground Turkey
1/2 cup diced sweet bell peppers, yellow, red & orange
1/2 cup diced green bell pepper
1 tbls onion and herb seasoning
1 tsp seasoning salt
2 tsp worcestershire
1 tsp garlic salt
1 tbls EVOO 
black pepper to taste
Portabella mushrooms
Red leaf lettuce

Combined the EVOO and garlic in a small bowl and set aside. Mix turkey, peppers, worcestershire and seasonings in bowl, divided meat into 4 patties. brushed both sides with the EVOO & garlic and cooked on hot grill for about 5 minutes per side (this would depend on the thickness of your patty). Brushed both sides of portabella mushroom with EVOO & garlic and placed on hot grill until heated through. 

I wasn't sure if I should have drizzled something over it because that's just what I used to do...but guess what? it didn't need anything! The flavor of the turkey with the peppers mixed with the mushroom was delicious!!!

Enjoyment, Gardening & Happy Mothers Day

What a beautiful weekend we are having! We all seem to always be on the go living a busy lifestyle and when we are all home at the same time for an entire day together it's priceless!!!! Our morning started off nice and relaxing just enjoying some down time and to not hit the ground running when our feet hit the floor. One of my favorite things to do in the morning is sitting outside listening to the birds sing to me and enjoy my breakfast, which was a cappuccino today. You could tell at that time it was going to be a gorgeous day.

The weather has been so beautiful lately and we have to take advantage of it when we can. We have been wanting to get out in the yard and get some stuff done and today was that day to do so. I love my "dirt therapy" and luckily my hubby does as well. It's so rejuvenating to get out there and just breath the fresh air and feel the warmth of the sun on your face. Gardening is a great way to be active and you get to see all your hard work look so pretty in the end...nice!! 

We have been talking about putting a flower bed around the tree so I was super surprised when I got back home from picking up our boys at the groomers to see that my wonderful hubby had dug out the bed. I couldn't believe that he got so far in such a short amount of time.

when my mom was here for a visit during spring break she bought me my lettuce starters for Mothers Day...she know's how much I love my lean & greens and salad is one of my favorites :) 


my wonderful husband and daughter did grrrrreeeeeeaaaaatttttttt! I love to see them practicing healthy habits and cooking healthy. They wouldn't let me do anything today not even help with dinner. They are spoiling me all weekend. I'm a lucky girl!!!

God has truly blessed my life with these two. I am thankful everyday for their love, thoughtfulness, understanding support and encouragement! They melt my heart and keep me smiling. 


being a mom is one of life's most beautiful treasures. Enjoy every moment because it goes by so fast. Love them, hug them and spend as much time with them as you can.

Zucchini Noodles

I stumbled across an article on zucchini noodles and was curious on what the heck those? I had never heard of them before which is surprising and I thought what a neat idea. I love zucchini and what a fun way to mix it up a bit. I'm always looking for new ideas for dinner and honestly never thought of this. 

I didn't have a julienne peeler and needed one to do these (because I do not have the patience to thinly slice these...could you imagine. No thank you! I figured I would be able to find one at Fred Meyers because will come on its Freddy's they have everything, right?. Nope they didn't have one, they had every other peeler but this on. So I ended up finding one at a home store.

I washed and dried 3 zucchinis, cut off the end's and started slicing. I've never used a julienne peeler so I couldn't believe how easy this little tool was. 



I sprinkled the noodles with a little bit of sea salt and let them sit in a colander for about 10 to 15 minutes while I sliced tomatoes, removed the seeds and then diced. I used 2 tsp of EVOO in a hot skillet with garlic and lightly sauteed zucchini. I didn't want them to get soft or mushy so they didn't cook but maybe 3 minutes. It was just enough time to get them heated through. I added diced tomatoes and basil and then gave it a quick toss.



served with a broiled cod fillet seasoned with garlic and herbs. YUM!!! It was a nice and light dinner that was full of flavor and fun.


My husband went on to tell me after we had sat down for dinner that when I told him what I was making for dinner he wasn't sure about this one "zucchini noodles", seriously? He is glad now that he didn't knock it until he tried it because he loved them.
