Anyways, I'm always looking for fresh new healthy meals that I can make the family. I was inspired by a picture my friend posted on Facebook the other night of what they made for dinner. It was chicken topped with cooked tomatoes, olives and balsamic vinegar. It got me craving something along those lines.
Well we love salads and this time of year it seems like that's the majority of what we eat. So to mix it up I wanted to try something new. I love bruschetta, but lets face it I don't need or want the bread and all of its carbs. This was an easy and fun one to make plus I love the colors. Such a simple salad but loaded with tons of flavor.
The house smelled amazing with the aromas of cooked garlic and fresh basil....
1 package chicken tenders (net weight 1.5)
minced garlic
1 head of romaine heart
1 1/2 cups of grape tomatoes
5 leaves of fresh basil
2 cups fresh green beans
1 Tbs EVOO
2 tsp balsamic vinegar
Mrs Dash original seasoning, to taste
1 tsp Mrs Dash garlic and herb seasoning
ground black pepper, to taste
I started off by cooking the minced garlic in 1 Tbs of EVOO. Now I love garlic so I personally used 5 cloves but seriously you can use one to two, its up to your own taste buds. Unfortunately I didn't think to grab my camera to snap a pic of the garlic as it was cooking but it toasted up nice and golden. Once you have it toasted to your liking transfer to a bowl with oil and all and set aside to cool.
Season chicken with Mrs Dash original and ground black pepper. Toss on grill.
While chicken was cooking I sauteed the green beans in the skillet I used for the garlic with 1/2 cup water and Mrs Dash garlic and herb seasoning just until they turned a bright green (wanted to keep some of the crunch). Set aside and let cool.
Sliced tomatoes, fresh basil and then mix with cooled garlic in bowl, tossed with 1 Tbs of balsamic vinegar. Cut romaine hearts and assembled salad.
tip: if you stack the basil leaves together and then roll tightly and slice it makes it so much easier
This serves approx 3 but it just depends on how much lean each person wants. The above picture is mine with 6 oz of chicken tenders(each tender seemed to be about 1 oz) 1/4 cup cut green beans, 1 1/2 cups romaine hearts & 1/2 cup tomatoes
